Breakfast is the most important meal of the day as it has got the immense power to make or break our day . Making wise food choice and not skipping breakfast will undoubtedly ensure we will have a productive and I-feel-healthy-and-going day .

A good healthy breakfast ensures we get ample strength,apt concentration and also it infact helps in maintaining our healthy weight . Many studies have confirmed that skipping a breakfast doesn't mean no calorie intake but in fact it means more calorie intake later on as a big lunch ,snack or dinner . So,it doesn't help in losing weight but in gaining instead.However, there are times when we are too busy that even though we want to, we tend to skip the breakfast and then there are a few grab-and-go foods that we can prepare ahead or instantly in no time that we would feel guilty next time if you say ,"I don't have time to make breakfast you know." ....

Health is wealth .Period.We have to make time for that before it becomes too late ......

And one such grab-and-go my favorite breakfast item is smoothie...the versatile drink that can be prepared using any fruits of our choice in different combination and whenever I add thick yogurt to it I call it "My Indian Lassi" ....One large glass of Lassi or smoothie is enough to make the day go real smoothieeee ...

One of my all time fave smoothie or Lassi is Banana cocoa ,a healthy combo for sure.

Though they say,"An apple a day,keeps docs away." . Bananas have two times as many carbohydrates as an apple, five times as much Vitamin A and iron and three times as much phosphorus. In addition, bananas are also rich in potassium and natural sugars.(Courtesy:Lifescript.com).

Few other interesting benefits:
  1. It provides natural energy and aids in performance and concentration.
  2. It has got the mood enhancing properties and therefore are a boon for depression sufferers.
  3. It is also helpful for ladies if they suffer from monthly cramps .
  4. It helps in replenishing the vitamins and reduce the hangovers as well.
  5. The B vitamins and other minerals that they contain reduce the physical and psychological effects of nicotine withdrawal and so helps those who are quitting smoking.
  6. It helps pregnant women to combat morning sickness,replenish the body and restore the healthy blood glucose level.

So, an easy breezy healthy drink made of these two super miracle food items is always under my "Must have" breakfast menu .


Banana Cocoa Smoothie

Ingredients

Banana ,peeled,chopped- 1 no.
Honey/Sugar- 2 teaspoons
Low fat milk - 1 1/2 cup
Yogurt- 1/4 cup
Cocoa powder - 2 teaspoons
Ice cubes (optional)

Method:

Put everything in a blender or juicer and pulse it until you get the desired smooth consistency .Serve cold and immediately (for fresh taste) .Sprinkle the cocoa powder on top .

Note:
  1. For a sweet lassi ,add more sugar if the Banana is not that ripe and more yogurt as well.
  2. For making a thinner drink add more milk,less yogurt and more ice cubes.

So,next time if you have ripe bananas sitting on your counter tops and you plan to trash them,DON'T..instead embrace them and turm them into such healthy smoothies....

Jamun Lassi

This is one of my quickie breakfast drink nowadays ,our great Indian Lassi which I call it an Indian smoothie as well ,made up of yogurt,spices,water ,fruits and little milk.It is so versatile,healthy and quick to make that "Lassi jaisi koi nahi ";P. It makes my day ,in a healthy way.....I tried making it with a healthy dose of Jamuns ....Jamuns  also known as Black plum/Java Plum/Jambul orr Syzygium cumini :O
I love them (but not that cumini name though..ask my tongue..well wait..it's so twisted now:|) ...Not only because of the health benefits it has but also of the purple color effect it has....since childhood days I love it when my tongues would turn purple ...a fun part of childhood days when all this was nothing less than a magic :) ......

Did you know that each and every part of Jamun trees are loaded with health benefits and it's quite popular for it's exceptional role in treating diabetics and more ..........

So,this is an exclusive diabetic friendly lassi with the goodness of jamuns and yogurts...it is refreshing,enriching and rejuvenating ......Trust me iss Jamun lassi jasi koi nahi 8) :D....


Jamun Lassi

Ingredients

Yogurt - 1 cup
 Milk - 1/2 - 1 cup
 Stevia( sugar free)/Sugar - 3 tablespoon
 Ice cubes - 1
 Jamun,deseeded - 1/2-1 cup
 Cardamom powder - 1/4 teaspoon

Method :

  • In a blender,blend together all ingredients well until frothy.
  • Serve cold...and say Jamun Lassi jaisi koi nahi ;D..lol..
Note:
  • The Greek yogurt is best or the regular home made one....but don't use any sour curd/yogurt.
  • For a salty version,instead of sugar add 1/2 teaspoon salt.
  • More the sugar,more tasty it will be.
  • To make it a thinner beverage add little water to it or more ice cubes later.

So true,isn't it.Today is the day dedicated to love ..Love,the basis of all relationships ...Life becomes a magic if  there is "True" love and void if otherwise ....But so often we underestimate the love ,care and attention we are blessed with that I personally believe that there should certainly be a day exclusively for Love but not restricted to a man-woman relationship ...but beyond that ...like a reminder to celebrate & appreciate how blessed we are to have all those who love and care for us regardless....

During my school and college days,this day used to be something I liked but pretended that I didn't :P...because this day was the "Only" day that kinda made me gloomy and sighing that," Damn !! I wish I had a boyfriend too." ...yeah kinda ,"Being single syndrome" !! ....couple of my friends were showered with red roses,chocos,teddy bear (aww how shweet :-\) ,cards,songs..damn..what not...well,almost every girl wants to be pampered and then I rethink of all those love proposals I got once by a few guys ,though couple of love proposals I got used to be by some anonymous guys during school ,during college days too...and I secretly wished ..if I would have said ,"YES" to aisa din dekhne ko nahi padatha ..this day would have become one of the most memorable in my life probably..Sighhh..sob (secretly)..

All thanks to my upbringing that my parents made sure that I and my bro would never fall into some love shove trap ...strict and quite conservative they were then..so ,I knew this was going to be the same story every valentine's day ...anyways,after marriage ,"Not anymore" :D ...now every day is a Valentine's day...full of love,care,sacrifices,adjustments,silly talks,lame jokes,special moments,awkward situations,testing times,small fights,strong disagreements and THEN falling in love all over again more strongly because you realize eventually that,"You are mad because of each other lol, BUT, made for each other and ALWAYS mad for each other.....:)

I think I've celebrated almost every Valentine's day in my own small way since wedding....preparing something special for him and my hubby I must say is a great gifter too :)...This Valentine's day I prepared homemade chocolates for him ..I am not a big fan of chocolates but he likes to eat one or two and rest goes to my friend's kids ..

This is a super simple recipe ,like a quickie ,Instant one,all you need are baking chocolate chips and a chocolate mold and Tadaaa...forget about buying chocolates then..:P...

Home made chocolates

Ingredients

Chocolate chips - 1 cup (I used Gingerbread candy melts and classic white chocolate chips)
Chocolate mold
Microwave safe bowl 

 Method :

 

  • Place the white chocolate chips in a microwave safe bowl and cook it high for 30 seconds,open the microwave and stir the chips and keep on repeating until the chips completely melts.(Repeat for the brown candy melts).
  • Stir the melted chips nicely and pour it hot into the chocolate molds.
  • Let them cool or put them into the refrigerator .
  • After 30 minutes or more ,pop each mold carefully ,so that the chocolates come out properly .
  • That's it homemade candies/chocolates are ready.

Just like Charles.M.Schulz said,"All you need is love.but a little chocolate now and then doesn't hurt" ...Totally second that :D

Also like to share something -last year hubby gave me a chocolate box on Valentine's day and there was this sheet of paper beneath the chocolates which had small words of wisdom which I loved more than chocolates infact I've framed it in my room ..."Lovely pearls of wisdom "!!

Cabbage daal

If you are running out of time and you have to make any curry ,which one you would go for ??? Well,if you ask me I would go for a humble,simple and most importantly super duper quick Indian Lentil soup a.k.a our ghar ka daal ....:D....Actually that's the no.1. reason I love them and then comes their super health benefits :P...well,thanks to the one who invented daals ,it's a boon for the lazy me plus it's nutritious ..win-win in every way....Well, a simple humble jackpot for me :P...and it's so versatile and forgiving that it can be turned into different kinds with a simple basic recipe....and lately I am after Cabbage (though not a fan but...),the vegetable so healthy especially loaded with anti-carcinogenic properties/anti-cancer properties and bored of the usual recipes inspired me to cook a daal with purple cabbage in it and no complains, it was the healthiest dose of soup or curry in a hurry............

Cabbage Daal

Ingredients

Cabbage ,shredded - 1 cup
Toor Daal - 1 cup
Onion,chopped - 1/2 cup
Green chilli chopped - 2-3 nos.
Garlic,chopped - 1 no.
Tomato,chopped - 1/2 (optional)
Turmeric powder - 1/2 teaspoon
Salt to taste
Oil - 1 tablespoon
Ghee - 1 teaspoon
Mustard seeds - 1 teaspoon
Cumin seeds - 1 teaspoon
Dry red chilli - 2-3 nos.
Curry leaves - 1 stalk
Asafoetida a pinch or two

Method :

  • Pressure cook daal with turmeric powder and salt for one whistle or until cooked (as per your pressure cooker's instructions).
  • In a kadai or pan,heat oil ,splutter mustard seeds,then cumin seeds,dry red chillies,curry leaves and asafoetida.
  • Add chopped garlic,green chillies and onion,saute until transparent .
  • Add tomatoes ,saute until soft.
  • Add the shredded cabbage to it and saute a minute.
  • Add the prepared daal to it.
  • Let it boil and then reduce the flame and let it simmer for a few minutes.
  • Put of the flame and pour ghee over itand give a stir.
  • Serve hot with boiled rice or enjoy it as a delicious healthy soup.

Quick Apple sauce and its awesome uses...

An apple a day,keeps doctors away,they say and an applesauce a day also works wonder in its own way.....Well,my previous post of Potato pancake ,which happens to be quite a popular traditional breakfast item of American menu, is best enjoyed with the applesauce and then comes any other sauce or sour cream etc.So,when I came across the potato pancake in the old woman's day magazine it was accompanied with it's BFF,the applesauce as well and the recipe claimed to be the easiest one to make.Moreover,I was always curious to know more about Applesauce and it was a pleasant surprise to know that this very sauce can replace half the butter in muffins, cakes or cookies which will save calories and saturated fat while keeping the baked goodies moist and delicious.(Courtesy:foodnetwork.com) ...and that was indeed a "AHAaa moment for me"...as now I can see a ray of big hope in my baking adventures :D...oo la laaaa.....

The more I dug about them,more useful it appeared which I would love to share (adapted especially from yummyinspirations.net) :
It can be used as -
  • A sweet dip for vegetables like celery etc.
  • A dip for fritters.
  • Mixed through plain yogurt or cottage cheese to make it more flavorful like a parfrait.
  • As a relish for burgers.

 Apple sauce is an apple puree and flavored with spices like cinnamon,nutmeg or all spice .It is really easy to prepare apple sauce at home with a few ingredients.
As per Wiki maharaj, "Apple sauce used to be a food prepared for winter, since it keeps well. It is often an accompaniment to a main course. Swedes and the English, for instance, usually eat apple sauce as a condiment for roast pork. In Germany it accompanies potato pancakes. In the Netherlands, people often eat it with their fries;and "patat met appelmoes" is a traditional dish at children's birthday parties. It is also a popular accompaniment in the United States of America and is sometimes served as a dessert there as well. In France where it is referred to as compote, it is mostly viewed as a dessert and served at room temperature, with the notable exception of boudin aux pommes (dark blood sausage with apple sauce). In Portugal as well, maçã cozida (cooked apple) is solely viewed as a dessert."

Not to mention just like apple,apple sauce is also loaded with similar health benefits and healing properties and it can be prepared peeled or unpeeled but the unpeeled one especially if it is an organic apple has got added nutrients in it just like the pulp - "The flavanoids" ,which can reduce inflammation, regulate blood pressure, reduce excessive fat production in liver cells and lower your risk of heart disease,says "Fitday.com." . Wowwww..isn't it ..I certainly didn't knew all these hidden treasures in that simple sauce and now who will not like to make it and this is how I make :-

Apple sauce

Ingredients

Apple (orgainc preffered),cored and chopped - 2 1/2 lb 
Apple cider Vinegar - 1 cup
Brown sugar - 1-2 tablespoons(optional)
Ground cinnamon - 1/4 teaspoon (optional)

Method:

  • Boil apple and apple cider vinegar in a medium sauce pan.
  • Once it reaches the boiling point,reduce the flame,cover it and let it simmer,stirring occasionally ,until the apples breaks down becomes mushy ,about 20-25minutes approx.
  • Add brown sugar and cinnamon to it ,boil once again for a few seconds and put off the flame.
  • Let it cool ,then transfer it into a clean sterilized dry jar .
  • Store it in refrigerator.
Note:
  • If sweet apples like Gala,Fuji,McIntosh etc are used then sugar can be avoided .
  • Even nutmeg or all spice can also be used instead of cinnamon.

Potato pancakes

I love pancakes especially for its versatility as it can be savored in so many ways . Needless to mention,nowadays I am hooked to varieties of pancakes .They always grace my breakfast session yummily and with utmost satisfaction . Lately I came across this potato pancake in an old Woman's day magazine and I knew I had to try it because we are also a big fan of potatoes .So,I knew a pancake made with potatoes was gonna be really delish and filling and when it is red potato with a few colorful vegetables mixed in it is gonna be quite healthy as well...So,another healthy breakfast in my daily menu nowadays ....

Potato Pancake 

Ingredients

Red potatoes ,medium - 3-4 nos.
Onion,large - 1 nos.
Eggs- 1-2 nos.
Salt to taste
All purpose flour - 1/2 cup
Mixed vegetables (Carrots,peas,corns,beans),boiled and mashed to paste - 1/4 cup (Optional)
Pepper to taste
All spice - 1/4 teaspoon (optional)
Oil to fry

Method:


  • In a large bowl,whisk together the eggs,salt and pepper and keep it aside.
  • Using a box grater,grate the potatoes and onion together and mix it to the above egg mixture and combine everything well.
  • To the above mixture, also add the mixed vegetable paste and all spice .
  • Finally add the flour to it and make it into a thick batter.
  • Heat about two tablespoons of oil in a pan /skillet,pour couple of ladles of batter into it and spread the batter with the back of the spoon to create even pancakes.
  • Cook until browned 4-6 minutes per side and transfer them to the plate.
  • Repeat with the rest batter.
  • Serve hot with Applesauce or sour cream (most recommended) or my way,ketchup on the side.
Note :
  • Any potato can be used and just to make it extra healthy I added the mixed vegetable paste(boil the veges,mash it and grind it into paste) so it's strictly optional.
  •  I used all spice to make it more flavorful .
  • Complete the batter ASAP as it turns black because of the oxidation.So,it can't be used for next day or so.

Whole wheat pancakes without buttermilk (Thin and healthy version)

Do you know that I heard the word ,"Pancake" for the first time after coming to US ?...Yes...that's the truth :P...well,my G.K. is that strong afterall :P...and the best funniest part was that I thought them to be fullfledged cake that is made on a pan like the bakery cakes :D...well...my GK is....u know:| ...

To pull my legs further my hubby said,"Let's go for a flapjack ..I was like whaaat...I meant "Hotcake"..again I was like whaaaaaaat :O...later he told me lol that they are the other names of Pancakes ,which are nothing but a popular breakfast item of US ,can be called a thin round crepes or kinda cake prepared on a pan of course which is quite versatile as it can be enjoyed in the way we please with fruits of our choice,jam of our choice,even vegetables or meat as fillings etc . Well after hearing all these, I was like then who wants to wait further? ..lets go honey P and I tasted it for the first time in one of the popular restaurant in US specializing for American breakfast items,"IHOP" and just loved it and who will not??... covered with warm flowy butter,drizzled with sugar syrup of different flavors like blueberry,strawberry etc ..with option of going sugar free too and that was just the starting...picture aur baaki hai mere dost :D ...endless options to eat a simple pancake.....I didn't see any reason neither to eat and nor to try at home as well....Thank God I don't have any IHOP near by my house (though they would have thanked me a lot & would have made me the brand ambassador of their Pancakes) and Thank God that I now try by myself to make them at home :)...

The usual pancakes are made with the all purpose flour and I am not a big fan of that white flour,as it is not pure for good health ,try my best to avoid them and here I replaced them with wholewheat flour instead and the usual ingredients sans buttermilk like milk,egg,baking powder,butter ....Result:It's healthy ,its yummy !! ...

So,here's my version of a healthy pancake...


Wholewheat Pancake

Ingredients

Whole wheat flour - 1 cup
Egg,large - 1 egg
Milk - 1 cup
Baking Powder - 2 teaspoon
Honey - 2-4 tablespoon
Salt - 1/2 teaspoon
Unsalted butter/oil - 2 tablespoon
Vegetable oil - 1 tablespoon
For toppings- Mixed fruit and butter

Method:

  • In a medium bowl,mix together flour,baking powder and salt and keep it aside.
  • In another bowl,whisk together milk,butter ,egg and honey .To this add the above dry ingredients and whisk well until just moist and avoid over-mixing.It becomes a thick batter that can be poured.
  • It is not must but keep it aside for five to ten minutes.
  • Heat a pan,brush some oil or butter preferably and pour a small ladle of batter and spread it round.
  • Cook them until the surface bubbles and then flip it until the other side gets browned 1-2 minutes approx on medium flame.
  • Serve warm with the topping of your choice ,I used mixed fruits and melting butter ...yummmm....
  • Got 10-12 pancakes.

  When I ate Kitkat ,I got bewitched  ...as I got the curse it carries with it,"Have a break,Have a kitkat "! in my case as always it was vice-versa though :0))...and that's how & why I was on a break :P......well,kitkat apart :P,it's been a while since I did any mishmash , any golmaal here in my virtual home..I thought of sparing everyone with my yada yada yada for a while because your brain doesn't taste yummy anymore..so I stopped eating it for a while but I am back to eat your brain,steal your heart,shake your hands and rock and roll....wat sayy ??...

Well,last week was one "HELLuva" one ....I was not well ...still my mood is swinging to and fro ...but my baby blog felt abandoned,was crying for my immediate attention ....and that's untolerable and I understand afterall,"The show must go on"........and moroever,it was our wedding anniversary so like every year it's must for me to bake and make something special for my better half for making me the best half this day ;P (actually it's the other way :P)....so,I am glad I had no choice but to roll up my sleeves,get my b..body off :D,make my hands dirty and my wonder kitchen smell wonder full ....

This time I wanted to make it extra special by baking one of a kind cake and a menu unusual and lip smacking....So,the menu of the day was Spicy Kerala Crab curry,Kappa/tapioca,Ivy Gourd stir-fry/kovekya thoran with hot rice and the dessert of the day was, "The checkerboard cake" ,which I always wanted to bake once for sure....and I did...and the best part of it is baking without using any specific fancy pan , piping those roses and making those dolls representing me &honey P using cake fondant was super fun  (hope they do look like dolls though:D )....to be frank I was skeptical in the beginning about the checkboard cake but the outcome certainly blew my doubts away ...and I send half of the cake to hubby's workplace and everyone loved it but he was little sad ..I asked ,"Why?" ...he said he didn't even get a single piece :P...but he was v.glad that I did save a slice or two for him aside :D...(Bu then that's all he eats!)

This is certainly a foolproof recipe but needs more patience and effort ..all you need are a batter divided into a vanilla one and a chocolate one and two piping bags with each batter and three round pans to make three cakes in three layers respectively - 2 cakes with chocolate batter+vanilla batter+chocolate batter (again)and the third cake with the vanilla batter,chocolate batter and vanilla batter (again)and then stacking three cakes after frosting each one of them and finally frosting the entire cake with the chocolate frosting and when you slice it..tadaaaa...the cake just got transformed into an edible checkerboard..so are you ready to play ??

Checkerboard cake

Ingredients

All purpose flour - 2 cups
Baking powder - 2 teaspoon
Salt - 1/2 teaspoon
Sugar - 1 1/2 cup
Eggs ,large - 4 nos.
Butter ,room temperature- 3/4 cups / 1 1/2 sticks
Vanilla essence/extract - 1 1/2 teaspoon
Milk - 2 tablespoons
Semi sweet chocolate,melted - 1/2 cup
Unsweetened chocolate,meted - 1/2 cup
Chocolate frosting as needed
Cake fondant ,a ball size
Edible colors as needed - I used black,red,golden,light brown
Icing for making roses ,2 piping bags - red color and yellow color
Tip 12 and tip 104 and a flower nail

white and green edible pearls


Method:The video will give you the idea-

  • Preheat oven to 350 degree F and grease the pans ,dust the flour and keep it ready aside.
  • In a medium bowl,mix together the flour,baking soda and salt and keep aside.
  • In a large deep bowl, beat butter and sugar until well blended with a mixer at low speed.Then increase the speed to high ,beat until it becomes light and creamy for 5 minutes approx.
  • Reduce the speed to medium low and add one egg at a time and beat well after each addition.
  • Reduce the speed to low,add the flour mixture and the milk (1 tablespoon) and beat it until smooth .
  • Pour half of the batter into another bowl and mix melted chocolate and milk (1 tablespoon) into it. So,now you've two bowls - one with vanilla batter and other with chocolate batter.
  • Now take two large piping bags and fill each one of them with vanilla and chocolate batter respectively and make 1/2 inch opening in each of them .
  • Pipe 1 1/2 large inch wide band of chocolate batter around inside edge of two greased pans ,followed by piping 1 1/2 large inch wide band of vanilla batter and the third center layer filled with the chocolate batter in those two pans.
  • Similarly in the third pan,do the opposite,alternating rings of batter starting with vanilla,then chocolate then center again with vanilla.
  • Place two pans on a single rack and the last one on the second rack of the oven so that they all are not directly above each other.Bake them for 20 minutes or toothpick inserted in center comes out clean.Allow them to cool on racks for 10 minutes.
  • Loosen the cakes carefully and invert onto wire racks to cool off properly.
  • Place one of the identical cake on a cake plate and apply chocolate frosting all over and top it with the non-identical cake and frost it completely.Top with the third cake and frost the entire cake properly.
  • I placed my dolls with toothpicks into the cake and covered with my red and yellow roses and edible green pearls.
I made dolls like this using cake fondant- Let the pics speak for themselves...
