How to cook potato in 3 minutes WITHOUT using any water


I wonder if anyone can hate the humble jumble "Potato". As far as I know,every kid loves one vegetable for sure and that is potato .Don't know if it is because potato can be used to make varieties of delicious curry or snack especially but I have never heard anyone hating potato.

Potato is the world's fourth largest food crop and available all year around,grown all around the world.Potato was first cultivated by the Inca Indian tribe in Peru 7000-10000 years ago.By half of the 16th century,it was introduced to Europe by the Spanish and it spread all around the globe and became an integral part of food supply.

There are many ways to cook potato and today I am gonna share a unique method to cook potato in just three minutes in microwave without using water .This method I learnt from my roommate when we were working in Microsoft .Those days when we had to rush to office or had a long day at work,my friend /roommate who was a project Manager ,showed us this cooking hack - the quick way to boil potatoes in microwave in a few minutes and I can't thank enough of her smart idea,whenever,I am short in time,this cooking tip to cook potato fast comes quite handy .

Uzhunnu Vada|Medu Vada Kerala style|Split black lentil fritters


Meet the crispy,crunchy,soft ,savory Indian donut - Medu Vada .Vada is nothing but fritters made with lentils and medu in Kannada language means "Soft" .So,basically this Indian doughnut is not sweet or made with any flour .In fact,medu vada is nothing but fritters made with split black lentils.This lentil fritters is a famous South Indian snack eaten also as a breakfast item or even offered to God during Hindu festivals .Medu Vada also happens to be Hindu God, Lord Hanuman's favorite food item.Usually ,a garland made of strings of medu vada is adorned as a special offering by his devotees in Temples in India.


Medu vada is also loved by North Indians .

Medu vada is known by different names in different states of India especially in South India - Medhu vadai,Ullundu vadai,garelu and Uzhunnu vada  and in North India,they are called dahi bada .


Origin of Medu Vada

According to Wiki,like Dosa,Medu vada is believed to be originated from "Maddur" town of Karnataka.It was the famous Udupi restaurants that made it famous outside the South India like crispy dosa .

Oh my - who can resist the vada sambar/vada coconut chutney combo ? Simply finger dipping and finger licking ! Nothing yuck about it..aahaa..😍

Uzhunnu Vada and my childhood days

My bro and myself,we are two poles apart.He loves Parippu Vada and I love Uzhunnu vada and thank God,that means I can eat a lot 😜😊.I remember how I used to pray that my mom would keep Uzhunnu vada in my tiffin box for school and how I used to desperately wait for the lunch time ,period after period and my mom knew,those days my tiffin box would be spic and span clean .No scolding day for me !πŸ’ƒ


My mom used to be a uzhunnu vada distributor among our neighbors ,meaning whenever she made any vada she would share it with our North Indian neighbors who were quite fond of them.I have seen them literally licking their fingers off, the chutney laden uzhunnu vadas ,making me a tad more hungry indirectly .Damn it!


My better 1/2 also loves Uzhunnu vada and as always, it is a pleasure eating with him (and I realized,ohhh yes,finally,I am grown up to share happily!!)

How is Medu Vada/Urunnu Vada made?

Medu Vada is made by grinding soaked black lentils into a thick paste and flavoring it with onion,ginger,cumin,etc etc which varies from place to place.So, today I am going to share how I make crispy yet soft Medu Vada Kerala style that is Uzhunnu Vada (Uzhunnu means Urad Dal/Black lentils and vada means fritters) at home .This is how actually Medu vada is made at my hometown.


Uzhunnu Vada Kerala style
Split Black lentils/Uzhunnu parippu/Urad Dal - 1 Cup
Onion,chopped - 1 No.
Green chillies,chopped - 3-4 Nos.
Ginger,chopped - 1"
A few curry leaves
Salt to taste
Coconut oil for deep frying

Sukhiyan|Sugiyan recipe - A kerala traditional sweet snack (Quick and easy version)


Sukhiyan/Sugiyan is a deep fried sweet traditional snack of Kerala made with green grams,jaggery,coconut etc .Keralites/Mallu love to eat this snack as a nallu mani palaharam (locally said in Kerala) meaning evening snack, with a hot cup of chaaya /tea ...These sweet snacks hardly anyone can resisit.They are a deep fried snack and also a sweet one and moreover,quite easy to make at home as well.I say Home Run peeps!!

I wonder why they are called "Sukhiyan/Sugiyan" - my wild guess is that they are related to the Malayalam word "sugiyan" which means one who loves to enjoy just the sweetness of life in a lazy and laid back way .Looks like a sweet snack invented by some sugiyan or sugiyati 😁😜 .....Anyways,whoever invented it,kudos - good stuff it is !! Because of the green gram,I find it also tad healthy .

First time I had sugiyan was when I was little and my grandpa/achachan used to bring us packets full of snacks from a nearby shop exclusively for us,grand kids .When everyone at home were excited to see my grandpa back from his walk and leaving everything they are doing and standing up as a mark of respect to him (that is a norm in Kerala),my eyes were all on those oil spilled newspaper crinkled in his hand and the amazing edible aroma it used to spread or may be I could whiff like a dog 😏


How I wished grandpa would hand over that packets filled with sukhiyans to me right away..but alas...he would hand it over to my mom wisely ...And mom used to distribute to everyone including elders...How I hated that !😑...I would pray, at least 3 piece I should get...Sometimes I got,sometimes my paa would give me his share or amma would,bro would never...

Gone are those days,but to rekindle those memories once again,I make this quick and easy version of Sukhiyan at home sometimes..

So,this is how I make this Kerala special dish,Sukhiyan and this is an easy version ...Now that's called "Sugiyan effect"/ "The Sukhiyan syndrome"πŸ˜‰

Sukhiyan|Sugiyan (Quick and easy version)

Mung Beans/Mung Dal/Cherupayar - 1 cup
Jaggery,grated - 1 cup
Coconut,grated - 1 cup
Cardamom powder - 1 Tsp
All Purpose Flour/Maida - 3/4th cup
Rice Powder - 1 Tbsp
Coconut oil for deep frying

Dosa is one of the famous Indian crepe or pancake (only by appearance) made with a fermented batter of rice and black lentils a.k.a urad dal all over India but is a staple breakfast food item of South Indian states of Tamil Nadu,Karnataka,Andhra Pradesh and Kerala exclusively .

Indians love dosa so much that ,it is also one of the most popular street food,kinda healthy fast food and also made at home and so there are many varities of Dosa - Most famous one is Masala dosa,plain crispy dosa with different chutney and sambar ,Mysore dosa,Udipi special dosas,paneer dosa,egg dosa ,Rava dosa,pesarattu,neer dosa etc etc ...variety is the spice of Dosa πŸ˜‹πŸ˜‰ .


Origin of dosa

According to many well-known food historians,dosa originated in South India itself centuries ago.However,the exact place of origin is still a mystery for food historians who have contradicting views till today.

According to the famous food historian K.T.Achaya,as per Sangam literature dosa originated around 1st century AD in ancient Tamil kingdom.Another famous food historian,P.Thankappan Nair speculates dosa originated in Udipi in Karnataka and so is ,even today, in every restaurant, famous dosa is considered to be Udipi Dosa as the dosa originated in Tamil Nadu used to be thick and soft ,but the Udipi dosas have the thin and crispy texture to it .Special mention, especially of the dosa recipe from Karnataka, is recorded in one of the popular 12th century encyclopedia compiled by Someshvara ||| ,the famous ancient ruler of Karnataka.

Health benefits of dosa
  1. Dosa provides healthy dose of carbs ,that can keep us full ,energized and maintain optimum weight.

How to make/prepare Dosa at home ?

Dosa is prepared by grinding and fermenting rice and black lentil .Making the right consistency of dosa batter and cooking/preparing crispy dosa is itself an art ....

This is how I make crispy crunchy dosa at home,in fact,thin crispy ghee roasted dosa at home :

Basmati Rice - 1 cup
Black split lentils/Urad dal - 1 1/4 cup
Fenugreek Seeds - 1 Tsp
Salt to taste
Ghee as needed

For me the crispiness and crunchiness of dosa is so addictive that I don't any accompaniments like chutneys,sambars with it ...Just a thin dosa ..made fresh ,hot and to its crunnnchy texture is enough...

Also,I felt like cleaning can be a little challenging .So,I would request Infinity jars to provide a special cleaning brush with their products not just cloth if possible ,as regular brush may or may not fit in always .I know none of the jars do mostly but if possible,that would be quite helpful !


Though all information are available at their website,please provide an instruction manual with dos and don'ts included in every product package if possible - like how to clean the jars first before use,what all products like hot or cold can be stored,any exceptions/restrictions,how to take care of these jars properly etc etc as clear guidelines .So that we can use these precious jars in its optimum way more appropriately.

These are just requests not cons about these products .All in all ,I love these dark jars so far and I highly recommend it to everyone!
