Cooking is like Nirvana for me.I love cooking, especially in the comfort of my own home, with my well-stocked kitchen and all the essentials I need to carry out nothing less than my own edible scientific experiments.Even smoke alarms are silent now.Sometimes I “redo” a recipe, “save as” a new version, and “share” it with others as well.

Yep, I can say one thing that means a lot to me in a thousand different ways: time and again, I find myself repeating things in my own little way, only to have my blog readers say, “I’ve heard that before!” Well, I’m gifted too... duh! 😄

Cooking is not a child's play; it is about building layers of aroma, texture, acidity, heat, sweetness, and richness until everything clicks. Patience, passion, and true dedication make cooking worth the effort. Yet, it is often the subtle secrets, tips, and kitchen hacks that make the process fun, effortless, and deeply rewarding. I call them culinary pearls of wisdom—commandments that can make or break a dish, turning a potential wonder into a blunder or vice versa ,which I learned it in a hard way.

Some are passed down through generations and shared from one kitchen to another. Others are discovered through years of trial and error, or picked up from cookbooks, magazines, TV, social media, and AI. While a few may already be familiar, others will leave you wondering, "Why didn't anyone tell me this before?" or "Why did I never think of that sooner?"

As I mentioned before, ever since I started cooking on my own, I have built a collection of printed recipes I hope to make sooner or later. It looks more like a research project than a bunch of recipe print outs, which is actually one of the main reasons I started blogging.

So, I do have printed pages of cooking tips and tricks, and they’ve been crammed inside one of my kitchen drawers for quite some time, practically suffocating! I completely ignored them and forgot all about my little bundle of cooking research papers and the project I had once been so excited about.

As I was thinking about which recipe to try next for my blog, all those recipe names started sounding rather controversial. Even though being genuinely me ,unfiltered and sensible , I didn’t want to come across as a “conspiracy theorist,” someone making a mountain out of a molehill, or,  Mother Teresa reborn (with all due respect to Mother Teresa!). Nor did I want to appear to be competing with Mr.Elon Musk or NASA (with all due respect, Sir!), sounding like ET/UFO or become Mrs. Peter Pan, a Willy Wonka hater,with an attitude problem to irritate the dark people - I am so pure and perfect ! No f**** given or Don’t f***with me. 😂

So, after racking my overworking brain for no reason, challenging my logical thinking, and brainstorming my way through the culinary chaos, I finally decided that I would rather write down some cooking wisdom, hacks, and techniques I have collected over the years for the record, right here on my blog.

Hopefully, they will be useful and helpful to others, too.I forget all these cooking trick and have not used all of the cooking tips yet.I don't want to search in internet or ask someone every now and then.So,for my record I made these cooking tips and trick article here.Hope they are indeed working and useful as they claim to be.

So, here are a few traditional cooking tricks, practical hacks, flavor and texture tricks, clever kitchen techniques, and some little discoveries that might make you wonder, “I wish I had known that!” or, “Why didn’t someone tell me this before?”

So,here I am ,the crazy cooking scientist saying “I ,Manjusha,will tell you for sure !” So,open the spice box, get ready to cook if interested or whenever you are ready,sharpen your curiosity, and let's uncover a few kitchen secrets together- “Wait… I never knew that!” tiny details that matter more than they seem.

So,here are my less-obvious kitchen/Cooking wisdom. Credit goes to my mother (I thought she was trying to be a perfectionist !),Internet (the worldwide teacher),Magazines (I read too !),TV/Youtube Videos(Bingo !).

Let's start on a positive note,it is going to be quite long :

"When life tastes bitter, don’t throw away the whole recipe. Change the ingredients you can control.”   

Baking tips and trick 

  1. Check Room temperature - Use ingredients that are at room temperature,the butter should be soft but not melted or oily.

  2. Egg secret - Always use large eggs (room temperature) when baking.Drop cold eggs into warm tap water for 5 minutes before baking to ensure even batter rising and texture.

  3. Creamy butter and sugar saga for a soft cake - Cream the butter and sugar together well enough before adding the eggs ,otherwise the batter often turns dense, flat, or greasy because air pockets aren’t incorporated.

  4. Light cake - Add a teaspoon of lemon juice to the butter and sugar called for in the recipe before mixing the rest of the ingredients.Helps make the cake lighter.

  5. Baking powder for cake - Approximately,use 1 ½ Tsps of baking powder for every cup of flour in cake batters.

  6. Flour speed - Always mix in the flour at the lowest speed.

  7. Cake batter trick - Do not overmix cake batter.Mixing too long at a high speed can result in large air holes that cause the cake to fall in the center.

  8. Nuts and fruits in cake - Dust nuts and fruit with flour before adding to cake batter or try toasting nuts first/freeze nuts or they will sink.You can also sprinkle the nuts across the top of the batter instead of mixing them in,this way the nuts will toast while the cake bakes.

  9. Donot overfill cake pan - Cake pans should only be filled ½ to ¾ full.Use leftover batter to make cupcake.

  10. Cake and air pockets - After filling a cake pan with batter,tap it gently on the counter to remove any air pockets.

  11. Remove air holes in a cake batter - To keep holes and tunnels out of your cake,run a knife through the batter after you have finished mixing it.This removes air holes.

  12. How cake fall - Be careful not to open the oven door during the first 15-20 minutes of baking.The sudden movement and temperature change can cause the cake to fall.

  13. Cracks on a cake issue-The oven temperature was too hot,causing the outside of the cake to bake and form a crust quickly. Room-temperature ingredients,mixing batter until well-combined,placing it in the center of the oven and a preheated oven will help the batter rise evenly.

  14. Sticking cake mishap - If the cake sticks to the pan and threatens to split,hold the pan over a low flame for about 5 to 8 seconds and the cake will come out nice and firm.

  15. Frost the cake apt- Cool the cake thoroughly before frosting.Icing will melt if applied to a hot cake,to speed up your cooling time you can place the hot cake pan in the freezer as long as you have room temperature icing.

  16. Wax paper cake decorator - Make a cake decorator by rolling up a piece of wax paper into a cone shape so that one end has a smaller opening than the other.Snip the small end with scissors to make a good point.Put icing in and squeeze it out through the pointed end.Use tape to secure if necessary.

  17. Chocolate whipped cream - Make chocolate whipped cream by combining 2 tablespoons each unsweetened cocoa powder and confectioners’ sugar in a mixing bowl.Gradually stir in 1 cup whipping cream,then refrigerate for at least 30 minutes before beating.

  18. Glossy frosting/icing effect - After frosting the cake,you can use a hair dryer to slightly melt the frosting.This will give the frosting a smooth,glossy look.If you prefer you can use a metal icing spatula or knife first heated by sitting in hot water,wipe dry ,then use the heated knife to smooth the icing.

  19. How to melt chocolate for cake - Have a bag (plastic) of chocolate chips on hand ?Just sit the whole bag in a bowl of very hot water,and mush the bag up every couple of minutes until all the chocolate has melted and there are no lumps.Snip the corner of the bag and squeeze out the melted chocolate directly onto the cake.

  20. Icing hold onto the cake - To help prevent a flaking or cracking frosting,add a pinch of baking soda when mixing the icing.If icing is a bit too thin or runny,lightly dust the top of the cake with flour then spread the icing on top.This will help the icing hold to the cake.

  21. Shredded coconut for a fancy cake decoration - Colorful Shredded coconut can be a nice,decorative touch achieved easily.Simply put the coconut in a clean jar (Only one half jar full at a time),add a few drops of food coloring in your choice of color ,then cap the jar and shake it until all the coconut is evenly tinted.

  22. Big cake from ready made cake mix - To make a bigger cake from a mix,add ½ cup flour,1/2 cup sugar,1 egg,1 tsp of baking powder.

  23. Lighten store bought frosting/icing - When using a store bought frosting,and you want to extend it by making it lighter,just whip it with a spoon while it is still in the container.It will “aerate” the frosting and make it easier to spread.

  24. Perfect Smooth icing effect - Use a spatula or flat icing tool to make perfectly smooth icing .Start on the top of the cake and then go around the sides.If you would like to try using icing so that it will pipe out of the bag and not leak out of it.You can buy professional bags or you can make your own by using zip lock plastic sandwich bags and placing icing tip inside corner of bag and then add icing,fill only a small portion of the bag and twist the end close and then use for icing.

  25. Baking Soda vs. Baking Powder 
         Baking soda + acid = bubbles
         Baking powder = acid + soda already packed together
  • Baking soda needs an acid to activate, such as buttermilk, yogurt, lemon juice, or vinegar.

  • Baking powder already contains both an acid and baking soda, so it mainly needs moisture and heat to make baked goods rise.

  1. Acid and leavening agents in cake - Cakes that contain an acid in another form,such as sour milk,buttermilk,or fruit juice,need only the half of baking soda and the baking powder (½ – 1 Tsp) approx.

  2. For a standard homemade apt cake baking, a good starting point is: Temperature: 350°F (175°C) Time: 25–35 minutes
  3. Light cookie trick - Adding cornstarch makes cookies and cakes lighter and tender.

  4. How many egg for cake - For 1 cup (120 g) of all-purpose flour, use roughly 1–2 large eggs.

  5. If you want a soft, fluffy cake without butter, these are great substitutes:

  • 🫒 Neutral oil: Use ¾ cup oil for every 1 cup butter. Keeps cake exceptionally moist and soft.

  • 🥛 Plain yogurt: Replace butter with about ¾ cup yogurt per 1 cup butter. Gives a tender, moist crumb.

  • 🍎 Applesauce: Use ¾ cup applesauce per 1 cup butter. Makes a soft cake, though slightly denser.

  • 🥥 Coconut oil: Use 1:1 for butter. Gives a tender texture and mild coconut flavor.

  • 🥛 Buttermilk: Replace part of the butter with buttermilk for a softer crumb, especially in cakes that also use baking soda.

  • 🥑 Avocado: Puréed avocado can replace butter approximately 1:1 and produces a very moist cake.

COOKING Tip and trick !


  1. Stop Onion tear you up - Refrigerate onions for atleast half an hour before chopping to avoid tears.

  2. Baking soda meat tenderizer-Coat sliced beef or chicken in a pinch of baking soda for 15 minutes, rinse, and sear for melt-in-your-mouth tenderness.

  3. Bloom spices in fat-Fry spices in hot oil or butter rather than a dry pan to unlock deeper flavor.

  4. Instant Buttermilk - If you don’t have buttermilk,use 1 Tbsp lemon juice or vinegar plus enough milk to make a cup.

  5. Muffin Ice Ice baby - For extra ice cubes for a party,use muffin tins.The cups will make big ice cubes that last longer.

  6. Vinaigrette juice - Substitute grapefruit juice for vinegar in vinaigrette.

  7. How to make quick breadcrumb - Make bread crumbs if you have a lot of dry bread.Use a food processor to create crumbs and store in a covered glass jar in the refrigerator.

  8. Cream of tartar replacement - Instead of using cream of tartar,use 1 ½ tsp lemon juice or vinegar for every ½ tsp needed.

  9. Spicy gravy rescue - Unsalted cashew, peanut, sesame, or coconut paste ,yogurt,heavy cream,bit of lemon juice/vinegar and or sugar can dilute and mellow a spicy gravy and salty food.Increase the amount of vegetables, gravy, rice, lentils, or other main ingredients.

  10. Fresh Ginger for long -Tightly wrapped fresh ginger will stay fresh in the freezer for up to 3 months and can be grated or sliced frozen quickly -no need to thaw.

  11. Fresh herbs - After rinsing dirt from parsley,basil and other fresh herbs,wrap in damp paper towels and refrigerate in plastic bags.

  12. Quality of Spices - Red spices such as paprika and grounded pepper will keep their color and flavor longer if stored in the fridge.

  13. Sugar in tact - Soften up hardened brown sugar by placing an apple or piece of fresh bread in the container,seal together for 1 day,then fluff with a fork.Once you take the apple or bread out after 24-48 hrs, keep the container tightly sealed so the moisture doesn't escape again.

  14. Revive pasta/Spaghetti/Corn on the cob - Leftover unsauced spaghetti,other pastas and corn on the cob will taste almost fresh-cooked if you drop them in boiling water for just a minute or two,then drain and use.

  15. Pasta trick - Don’t rinse pasta after draining .If they are sticky,add a little oil and toss gently.

  16. Reheat secret - To maintain top flavor,use low heat and a short cooking time to reheat leftovers.For safety,food must be hot all the way through.

  17. How to treat Mushroom - Mushrooms are like sponges and shouldn’t be immersed in water.Better to clean them with a soft bristled brush or a slightly dampened towel.

  18. How to see shallots and pearl onions naked fast - Shallots and pearl onions are easy to peel if you wet them first.If you are peeling quite a few,let them stand in hot water for about 10 minutes.

  19. Lemon juice fast trick - To get more lemon juice,halve it and heat in the microwave for 30 to 40 seconds.Let cool,then squeeze.

  20. Fruit flies get out - Get rid of fruit flies by scattering some fresh basil or peppermint leaves inside your fruit bowl.The herbs are natural repellents.

  21. Frozen is good too - Frozen vegetables can be just as nutritious as fresh because they are processed at their peak time.

  22. Super soft paneer-Soak fried or store-bought paneer cubes in salted warm water for 10 minutes to keep them pillowy soft.

  23. How to use kasuri methi-Rub dried fenugreek leaves between your warm palms directly over the curry right before serving to release essential oils.

  24. Add garam masala at the end-Stir it in the last 2 minutes of simmering; cooking it too early kills its delicate aromatic volatile oils.

  25. Sticky Lady’s finger dilemma – Wash Lady’sfinger , dry it completely, slice it, toss it with a little oil and lemon juice, and sauté it uncovered until lightly browned before adding the rest of your ingredients.

  26. Stop curdling curd for gravies-Whisk curd with a teaspoon of chickpea flour (besan) or cornstarch before stirring into curries to stop curdling.

  27. Hing hai na-Add asafoetida/hing in Hindi to warm oil right before other spices to mellow its pungent smell into an onion-garlic aroma.

  28. Oil the pressure cooker rim-Dab a drop of oil around the lid vent to stop yellow dal water from spewing across your stovetop.

  29. Char onion on open flame-Roast whole onions, ginger, and garlic directly on your gas burner before blending for smoky dhaba-style gravies.

  30. Puffier rotis/Indian bread/Dough-Add salt to the warm water, not dry flour, for even dough hydration and puffier rotis.

  31. Cardamom pod crack-Crack green cardamom pods open with your thumb before tossing into biryani or chai to let the inner seeds steep.

  32. Salt vegetables before roasting, but don't drown them in oil - Too much oil can make vegetables steam rather than roast. A light coating encourages better browning.

  33. Cook potatoes fast -For boiled potatoes, place them in cold water first and heat everything together. This helps the inside cook before the exterior becomes overcooked.

  34. Add creamy liquid gradually-When adding yogurt, cream, or coconut milk to a hot curry, lower the heat first. Rapid high heat can cause dairy-based sauces to split.For yogurt, whisking it beforehand also helps.

  35. Cooking speed secret - Don't throw carrots, zucchini, potatoes, onions, and tomatoes onto one tray and expect identical cooking times.

Cut them according to their cooking speed.

Hard vegetables → smaller pieces
Soft vegetables → larger pieces

  1. Add coconut water to coconut-based dishes -Instead of using only plain water in a coconut curry, try replacing some of it with fresh coconut water for flavor. It adds subtle sweetness and makes the coconut flavor feel more rounded.

  2. Add one whole onion to dal while it cooks - Instead of chopping all the onion into the tempering, place a peeled whole onion into the dal while it cooks. Remove it afterward or mash it into the dal.It gives a mellow onion sweetness without making the dal taste aggressively oniony.

  3. Tomato vs Mango for curry/dal/lentil curry - When tomatoes aren't doing the job, a little raw mango can provide acidity with a distinctly Indian character.Especially lovely in certain dals, fish preparations, and vegetable curries.

  4. Flavorful coconut chutney - For coconut chutney, try lightly roasting a small amount of chana dal or urad dal before grinding.It contributes body, nuttiness, and a subtle roasted aroma.

  5. Crispy pan fried yummy fish - For pan-fried fish, a very thin coating containing rice flour can produce a delicate crisp exterior without turning the fish into a thick battered piece.

  6. Right way to add masala in a curry - Instead of adding your entire homemade roasted masala powder/garam masala/curry masala during cooking, reserve a tiny amount for the final finishing stage.The spices added earlier provide depth.The finishing powder provides aroma.This can make a huge difference in dishes such as sambar, vegetable curries, certain meat curries, and dry masalas.

  7. Salt and bitter coffee -A tiny amount of salt can reduce the perception of bitterness.

  8. Fluffy rice - Reheat rice with an ice cube to make it fluffy again.

  9. For burnt rice: Without mixing,move the unburnt rice to another pot and place a slice of bread on top for a few minutes. It may absorb some smoky aroma.

  10. Natural odor repellent - Keep a bowl of lemon slices or baking soda in the kitchen to absorb bad odors.

  11. Prevent salt from clumping – Add a few grains of rice to the salt container to keep it dry and free flowing.

  12. No tears while cutting onions – Chill onions in the fridge for 15 minutes or wet them under running water and cut to avoid tears.

  13. Tiny pinch of instant coffee: In a rich, dark curry, an extremely small amount can deepen the savory flavor without making it taste like coffee.

  14. Finish with spiced ghee: Heat a little ghee with cumin or dried chilies and pour it over the finished curry. This final tempering can make the aroma explode.

  15. Add acid at the very end: A few drops of lemon juice or tamarind can wake up a curry that tastes flat.

  16. Toast nuts before grinding: If you're using cashews, almonds, or sesame in the gravy, lightly toast them first for a deeper flavor.

  17. Wilted greens – Soak them in cold water to refresh.

  18. Caramelize onion fast - Put a pinch of baking soda in caramelized onions to make them brown dramatically faster.

  19. Extra-crispy potato fries - Soak cut potatoes in cold water with a splash of vinegar for extra-crispy fries.

  20. Slow down butter browning/scorching - Put a teaspoon of water in the pan when melting butter to slow down browning and reduce scorching.

  21. Enhance chocolate desserts - A tiny pinch of instant coffee can deepen chocolate desserts without making them taste like coffee.

  22. Retain eggplant color - Salt eggplant and leave it briefly before cooking to draw out moisture and improve browning.

  23. Tame the too spicy curry - Drop a peeled apple slice into an overly spicy curry for a few minutes to mellow the heat slightly through sweetness.Remove it once the curry is luke warm .

  24. Fresh cucumber - Sprinkle cucumbers with salt only shortly before serving if you want them crisp rather than watery.

  25. Brewed Tea and mushroom -Add a few drops of brewed tea to mushroom dishes for an unexpected earthy depth.

  26. Herbs/spice flavor bombs - Freeze herbs inside olive oil in ice-cube trays for instant flavor bombs.

  27. Tenderize meat - Coat meat with grated pineapple or papaya for a short time before cooking.

  28. Cutting board trick - Place a damp paper towel under your cutting board so it never slips while you chop.

  29. Frozen butter hack - Grate rock-hard frozen butter on a cheese grater so it melts instantly into flour for ultra-flaky crusts and biscuits.

  30. Peel hard-boiled eggs with ease:Adding white vinegar or baking soda to the boiling water weakens the eggshell's calcium carbonate, so the shell practically slides off.

  31. Cut soft cheese and cakes with unscented dental floss:It slices clean through goat cheese, cheesecake, and cinnamon roll dough without squishing them flat like a knife does.

  32. Organic foods aren't automatically more nutritious. Their main advantage is fewer synthetic pesticide residues, while nutritional differences are generally small. Eating plenty of fruits and vegetables matters more than choosing organic.

  33. Heavy cream substitute = 1 cup milk + 2 tbsp cornstarch+mix well until creamy.

  34. 1 Tbsp of yeast substitute = 1 tbsp of baking soda + 1 tsp of lemon juice

  35. 1 can of Sweetended condensed milk substitute = ¾ cup powdered milk+3/4 cup sugar+1-2 Tbsps of butter+1/2 cup hot water+blend until creamy and lumpfree.
