Spitzbuben - A german butter Cookie

Christmas is still in the air or is it a mere coincidence that whatever I cooked since then ,either the food name or food type started with letter "C" - like Cake,Cup cake ,cranberry wine and now Cookies.

I made them for new year for my friend's kids . These cookies are called ,"Spitzbuben" , one of the melt-in-the-mouth cookies originated in Switzerland and gradually migrated to Germany .It is in fact a sandwich cookie with jam filling and I simply love these little rascals .....no no don't raise your eyebrows ....Did you know in German ,Spitzbuben means "Little Rascals" ??? Not fair don't you think ..how can they name these little pretty cuties like that ...well,that I don't know,but what I do know is how they are made....

I don't have all the step by step pics ...as it is in a lot of other recipes because it's little difficult for me to cook and click simultaneously at times ,when my hands are really messy ...so excuse me for that...

Ingredients

All-purpose flour,sifted - 3 cups
Confectioners Sugar - 1 1/2 cup 
Butter , at room temperature (softened) - 2 1/2 sticks (1 1/4 cups)
Salt - 1/2 teaspoon
Vanilla essence - 1 tablespoons
Egg,large ,beaten - 1 no.
Concord grapes Jam/Any Jam with no fruit chunks - 1/2 cup
Warm milk - 1 tablespoon

Method:


  • Preheat oven to 375 degree F/190 degree Celsius.
  • Meanwhile,beat the butter and sugar well until creamy and fluffy.
  • Add salt,vanilla essence,warm milk,beaten egg in a bowl until smooth with a hand mixer/electric mixer.
  • Add the sifted flour little by little ,mix well and knead it into a dough (firm enough to roll out).
  • Roll out the dough on a lightly floured work area to the thickness of 1/8"-1/4".
  • Cut out using your desired shaped cookie cutter (in my case ,flower shaped) .
  • Using a small round cookie cutter ,cut out the center (round window) of about half of the cookies .
  • Place the cookies on the baking sheets and bake it for 10-12 minutes until very lightly browned.
  • When it's still warm,spread the cookies without a "window"/"center cut out" with about 1 tablespoon jam.
  • Top above cookies with a cut out cookies each.
  • Dust cookies with confectioner sugar. 
  • Spitzbuben is ready !!
