Gobi Mughlai - Roti,Gobi sabji and salad

Gobi Mughlai is an easy-to-make and yummy to eat, cauliflower recipe North Indian style made with the richness of cashew nuts and other spices that gives an ordinary cauliflower recipe a royal kick to it. This is my own recipe and it happens to be my family favorite, especially, since my little one could eat 2-3 chapathis/rotis without making any fuss happily.I am thankful to God that my little one loves my homemade food (almost) since she was little (Fingerscrossed!). Needless to mention, any parent's delight !!(Touchwood) 

Memories/Flashback to my childhood days

Though my amma is a great cook, I am not a huge fan of any of her cauliflower recipes (Shhh dheere dheere bol koi bol na dey,bol na dey koi ,pol khol na dey  😛). Even while eating out I like only Gobi 65/Gobi Manchurian only.However , I did like a cauliflower recipe, the taste of which still lingers on my palate since decades,a simple aloo-gobi recipe (Potato-Cauliflower fry) I tasted during my schooldays ...

The first school I went to was Chinmaya Vidhyalaya; white shirt ,brown skirt,brown and white striped belt with Chinmaya mission's emblem imprinted on it (our school uniform).Lots of powder sprinkled on my face by my mother and eyes full of kajal/kohl like a Panda,black bindi stamped on my forehead and on my light brown skin (When I was little I was darker in skin tone than I am now) ,huge school bag full of books,tiffin box,pencil box,geometry box, and a water bottle hung on my shoulder,black shoes,white socks ,a small handkerchief in my hand.

I felt nothing less than a small warrior in making, geared up, all set for a journey, every day to learn something new and acquire skills, preparing to face life boldly and smartly, fighting off any ignorance by the lessons/wisdom gained under the guidance of Guru/teachers/the experts/Masters at school...

I remember how achcha would drop me at the bus stop, where all my classmates and their parents would be waiting for the school bus as well...The arrival of the school bus which had Chinmaya Vidhyalaya imprinted on it bold and large with a colorful thick stripe,which we all used to call as Blue bus ,Red bus etc...How we hopped on to it , happy to see all our friends, and if someone would be missing/absent that would make my heart sunk a little ..I wanted to see all my friends - seniors, juniors,my classmates, batchmates..All...It made me happy !!😍...It took a while to reach school ,which felt like a long fun drive to school with all my friends..

Like that song , "यूँ ही कट जाएगा सफ़र, साथ चलने से , कि मंज़िल आएगी नज़र, साथ चलने से."...........👭👫😂😉😋

Once we reached school, we all would split and rush to our respective classes ...I loved my school days!...And how I looked forward to my lunch hours ...Right next to my class was her class,my beloved (sis),cute,short-heighted, lovely girl with curly hairs, twinkling eyes, and the most beautiful dimples I've ever seen in my life,a Mallu/Malayalee like me ,"Vidya" A.K.A Swapna was her sweet name...I had a serious crush on her dimples, lovely smile, and equally to her lunchbox ....We all exchanged our lunch with each other and I always checked her lunch box for her aloo-gobi sabji/her mom's cauliflower stirfry ..

This Potato-cauliflower stir fry looked very simple and tasted delicious...I used to give her a little and finish most of it all by myself as if I was starving for years...She used to watch me eating it bit by bit with a huge smile and laugh on her face which was ,kinda blur for me (teasing and calling me "Bhukkad" kahi ki 😁)....That aloo-Gobi recipe is the only one I loved so far in my life...Till today,I try to make varieties of cauliflower recipes just to replicate her mom's version and fail every time 😏....Anyways, so far ,this Mughlai cauliflower recipe is hit at my home.

After all this interesting info about Cauliflower,here is my interesting recipe for you ...this is how I make cauliflower recipe / gobi Mughlai my ishtyle...

GOBI MUGHLAI/CAULIFLOWER STIR FRY WITH PEAS ,POTATOES AND SPICES

INGREDIENTS

Cauliflower,medium size 1 No.

Peas (I used the frozen one) 1 Cup

Potato,medium size ,chopped1 No.

Water 2 Tbsp

FOR GROUND PASTE

Onion,chopped handful

Tomato,chopped handful

Cashewnuts 1 cup

Cumin seeds 1 Tsp

Turmeric powder 1/2 Tsp

Red chili powder 2 Tsps

Coriander powder 1 Tsp

Garam Masala 1/4 Tsp

Ginger garlic paste 1 Tsp

Mustard oil 4-5 Tbsp

Salt to taste

Cilantro for garnishing


Preparation method to make cauliflower recipe :

  1. Clean all vegetables.Cut the cauliflower into florets as shown in the video.
  2. Heat a frying pan and add the cauliflower florets,peas,cubed potatoes, and a tbsp of water and cover it with a lid till they become tender on low-medium heat.DON'T OVERCOOK THOUGH or they will turn completely mashed up while cooking but if you like it that way,then it's fine.So,check in between,it shouldn't be too soft but tender to eat.
  3. Once they are tender to eat,remove the lid and let all water dry up completely.Then put off the flame.
  4. Meanwhile, heat a pan,add a tsp of oil,cumin seeds,saute for a second,add the cashew nuts,chopped onions,tomatoes,ginger-garlic, and all spices mentioned above and saute for a few seconds, then cover with a lid until the tomatoes are cooked.Then put off the flame.Let it cool off a bit.Then ground it into a smooth paste in a mixer and keep it aside.
  5. Heat a wide pan or kadai,add oil and the above-ground paste and saute on low flame until the oil appears on the top clearly and then add the cooked cauliflower,peas, and potatoes and GENTLY saute them until all covered.
  6. If you wanna make it more crispy then add more oil and very gently saute until they turn stir-fried to the desired consistency.Add salt to taste.
  7. Garnish with fresh cilantro and that's it my Mughlai Gobi recipe is ready to eat.
  8. Serve it with roti/chapathi like I did in the video or with plain rice and curry.
