This is what happened when I first saw these fun-filled, lovely pinwheel cookies in a magazine - LOVE at first sight !! This is one of those cookies I just wanted to simply make,bake and keep on starring at than eating them .This cookie is so me - there is childishness ,full of twists and turns,multi-colored like me,shapeless or should I say uniquely shaped .(Well,give me a break,right !)..
It's been years,this cookie recipe in a magazine was sitting somewhere in my kitchen cabinet ,all withered and reminding every now and then to pay attention to them and bring them to life/bake them. Finally,I got a chance to do so .It was as fun to make them as they look.I think I enjoyed making them the most,felt like a kid playing with dough ...and it took me a while /days to really eat them...all I wanted was to admire them simply,silently....BUT the sweet tooth in me screwed it all ,and then it was non-stop..munch munch..munchhhhh ....there I go...
It's very easy to make these cookies.I have made a lots of cookies earlier but this one is the only one that called for cream cheese ,that intrigued my curiosity like how its gonna taste ...Taste wise I didn't like that much actually,I love my own versions of cookies which are quite simple to make and bake .Still I am a cookie lover monster..so bring it on ...
I did tweak this pinwheel cookie recipe a bit to suite my taste .So,this is how I make pinwheel cookie ...
So,what is Pinwheel ?
A pinwheel is a stick with twisted paper or plastic pieces attached to it that keeps on turning as they catch the wind.
Pinwheel cookies
(Inspired by the recipe in "Diabetic cooking")
Ingredients:
Butter,unsalted,softened - 1/2 cup
Cream cheese,softened - 8 oz
All purpose flour,sieved - 3 cups
Salt - 1/2 Tsp
Sugar,powdered - 1 cup
Vanilla essence (my addition,optional) - 1 Tsp
M&Ms candies/Any jam
Method: How to prepare pinwheel cookies at home ..
- Preheat oven to 350 degree F.
- Beat butter,sugar and cream cheese in a large bowl with electric mixer/hand mixer at medium speed 2 minutes or until well-combined.
- Add in the vanilla essence.
- Add in the all purpose flour and salt little by little,beating until well-combined.
- The cookie dough is ready.
- Divide dough in half ;shape each half into rectangle.
- Wrap dough in plastic wrap ;refrigerate at least 30 minutes .
- After 30 minutes ,take the dough out and roll out 1 dough piece into 15-inch square.
- Trim and and cut it into 3 inch squares.
- Slice squares from each corner.
- Fold half of each corner towards center.
- Place all cookies on cookie sheet/pizza pan/cookie pan.
- Bake them for 20-30 minutes.Remove from oven;place the m & m candies/jam onto each cookie center.
- Bake 5 to 10 minutes or until golden brown.
- Put off the oven.Remove carefully the cookie pan .
- Let them cool off completely.
- Dust with powdered sugar,if desired.
- Pinwheel cookies are ready .Then munch on...
Bake with kids,I bet it will be fun .
