I can't believe the first recipe on my blog in 2020 is "CHINESE" Potato .Before you hate me for the fact that now China/Chinese/Corona sounds same and scary ,let me tell you that this tuber vegetable has got nothing to do with China/Chinese .My curiosity to find out why the hell then Chinese is used before this Potato's name and I didn't find the accurate reason for the same,I came out with a weird conclusion that may be these tubers look quite small like Chinese people :D:D..(ooops my bad..don't be mad I also fall in that small category ) :P..

As a matter of fact, these tubers originated originally from West Africa and then migrated to India,Srilanka,Malayasia and Indonesia and even though it is called Potato, it belongs to a mint family says my friend Wiki .Interesting eh??

In India,Chinese Potatoes are used in dishes mainly in Kerala,Tamil Nadu,Karnataka and the Konkan area.It is known as Koorka in Malayalam,sirukizhangu in Tamil,sambrani gaddey in Kannada and kook in Konkani .

And today's recipe is a Kerala style Chinese Potato stir fry ,Koorka mezhukkupuratti in Malayalam .There are many ways to prepare this stir fry ,varies from place to place in Kerala.This koorka mezhukkupuratti recipe is going to be the simplest one .

So,let's jump to the recipe and see how to make Chinese potato stir fry Kerala style 

Chinese Potato stir fry|Koorka mezhukkupuratti 
Ingredients
Chinese Potato /Koorka - 1/2 Kilo
Onion,medium size,chopped lengthwise - 1 No.
Green chilli,chopped lengthwise - 2-3 Nos.
Coconut oil - 1-3 Tbsp
Mustard seeds - 1/2 Tsp
Turmeric powder - 1/2 Tsp
Red chilli powder - 1 Tsp
Curry leaves,a few
salt to taste
Water as needed


Preparation of Koorka mezhukkupuratti : 
  1. If the koorka is still muddy ,then wash it well under water and then scrape the skin off using a sharp knife or peeler.The koorka I have were clean .So,I directly scraped the skin off .
  2. Now,clean under water once or twice to remove any dirt on them.
  3. Take a small vessel,put all the clean chopped koorka with enough water ,turmeric powder,red chili powder and salt.
  4. Cover it with a lid until all water evaporates and koorka gets well-cooked.
  5. Take a frying pan or kadai,add oil,splutter some mustard seeds .
  6. Add the onion and green chillies and saute well until the onions turn transparent.
  7. Finally,add the cooked koorka into it and keep on sauteing until the Koorka is well fried to the desired level of crispiness.
  8. Add a few curry leaves and mix well.
  9. And koorka mezhukkupuratti is ready to serve.
  10. Serve hot with boiled rice ,non-spicy curry and other veg-non-veg side dish of your choice.

As you can see it is very simple to make this Chinese potato stir fry.It is not my favorite but nothing to hate about it.Give it a try!

By the by,can't believe I am blogging and making videos from India .Looking at the brighter side ,thanks to the corona lock-down for the inspiration and for extending my stay in India (I prayed to God to do something to prolong my stay,when my parents were not that happy that their son-in-law is all alone there in America and I am suppose to be with him ASAP and they (Parents and son-in-law were hatching plan to pack us back to US )...Gosh I had no idea God had another crooked plan called COVID in progress that apparently, I don't have to explain the reason to others 😋😉🙊) ..No offense God - You are my partner in crime and prime after all....

Having said that,we all are darn concerned for our Big Boss,my little boss ka baap ,stuck all alone in US . Just praying to God for his well-being and all ..
