Nadan mutton curry/Aadu erachi curry/Aatu erachi/Mutton curry Kerala style ,especially made by mother is my most favourite non-veg curry ever.Mutton is my favourite non-vegetarian food .For me mutton = melt-in-the-mouth meat !!Yummm ..(Paavam goat though ...😒shorrryyyyy, coz it won't save your life nyways ,if I won't eat,someone else will na,Jaanam goat samjha karo (I do love you !)😟)

During my childhood days,mutton,chicken used to be like delicacies .At home we used to buy not that often .Whenever we had some guests at home for lunch/dinner,then mutton/chicken would be in the main course for sure or some weekend special it would be, that we kids used to look forward to.

Also,during Diwali ,we used to have a get together at our home with close relatives and then chicken/mutton would be the special food item of the festival.I think when you don't get something often,it becomes tad more special ..taste-wise and memory wise.

After my marriage,in US, we hardly get good mutton,often they mix lamb pieces or they would sell lamb pieces as mutton .Lamb pieces are no substitute as they are hard to chew compared to the succulent mutton pieces .Yet somedays ,I crave for the same.

However, hubby/our bigboss is not a fan of any non-vegetarian food per se .He is more into vegetarian dishes .I don't have any problem feeding the little boss any non-veg food items,just like me,she loves it .I strongly believe non-veg (fish,egg,chicken,mutton) once in a while at least is good for health.

At every home , ladies usually cajole their kids to eat this-that,at my home it's hubby that I've to narrate all the benefits of eating non-veg etc etc to make him change his mind .Sometimes it works and sometimes it sucks . 

And if everyone at home are not eating happily ,then that upsets me except when I am not well.So,I also try to skip buying and eating mutton or other non-veg all by myself.I do try to make different varieties though to lure him to give it a try and sometimes it does work like a charm and then I am the happiest !

However,my all-time fav mutton curry is Amma's/mother's spicy mutton curry .I would save a bowl of curry to enjoy all by myself for the next two days as well.The best thing about this mutton curry is that mother/Amma hates to eat any meat but she prepares the best chicken or mutton curry that all our family friends rave about till today.

So,whenever I am in India,my father would make sure that I eat the mutton curry for sure.He would buy the best tender mutton pieces exclusively for me from the market .This year,I captured the preparation method of making this tasty spicy mutton curry Kerala style by my mom for my future reference and made a YouTube video of the mutton curry as well,hoping it will be helpful to others as well. (Not a perfect video but samjdaron ko ishara hi kaafi hota haina :P)

So,let's jump into the spicy mutton curry recipe :

Nadan mutton curry|Mutton curry Kerala style

Ingredients:

TO PRESSURE COOK:

Mutton,cleaned,cut - 750gm
Turmeric powder - 1/2 Tsp
Green chillies,slit - 2-3 Nos.
Salt - 1/2 Tsp
Water as needed

SPICES:

For Garam Masala:
Cinnamon - 1inch
Cardamom - 2 Nos.
Cloves - 4 Nos.

Red chili powder - 4 Tbsps
Coriander powder - 3 Tbsps
Turmeric powder - 1/2 Tsp
Pepper powder - 1/2 Tsp
Fennel powder - 1 Tsp
Cumin powder - 1 Tsp

Coconut pieces/slices - 4 Tbsp
Coconut oil - 4-5 Tbsps
Mustard seeds - 1/2 Tsp
Onion,big,chopped- 4 Nos./Shallots,chopped(20 Nos) 
Green chillies,slit - 4 Nos.
Ginger - 1 inch
Garlic ,small - 10 Nos.
Tomato,chopped - 1 No.
Curry leaves,a few
1st batch of coconut milk/Onnam pal/Thick coconut milk - 1/2 -1 cup
2nd batch of coconut milk/Randaam pal/semi-thick coconut milk - 1 cup
Salt to taste

Method to make mutton  curry :
1. Clean and cut the mutton well into bite size pieces or any desired size.
2.Transfer the mutton pieces,turmeric powder,green chillies,little salt and pressure cook for 2 whistles or until well-cooked .Put off the flame and let the pressure go down.
3.Dry roast the garam masala and grind it into a powder .(Fine or coarse,your choice)
4.Mix the garam masalas with all spice powders and keep it aside.
5.Heat a pan or I used mannchatti/meenchatti/Kerala Earthen pot with oil.Reduce the flame.
6.Splutter the mustard seeds.
7.Add the coconut pieces and sauté well.
8.Add the chopped/sliced onion ,green chillies,saute until they turn translucent.
9.Add the ginger-garlic paste,saute well.
10.Add all the spices+garam masala and keep on sautéing until the oil surfaces on the top (5 minute approx).
11.Transfer everything from the p.cooker into the mannchatti and stir well.
12.Bring it to full boil,then reduce the flame.
13.Add the 2nd batch of coconut milk/randaam paal and stir well.
14.Bring it to boiling point,then reduce the flame and leave it for a few minutes.
15.Then add the 1st batch of coconut milk/onnam paal ,bring it to boiling point,reduce the flame.
16.Cover it with a lid partially and let it thicken up a bit.
17.Then sprinkle curry leaves and give it a stir.
18.Put off the flame.

NOTE:
  1. Younger the mutton pieces,it needs less whistle to cook like 2 whistles and more the mutton pieces ,less whistle is needed.Matured mutton pieces need 3-5 whistles .Young mutton pieces are the most tender one.
  2. Use any store bought garam masala and the taste may differ as the spices will be different.
  3.  For making coconut milk ,put the shredded coconut into warm water for a few minutes like 10-15 minutes then squeeze out the coconut milk and strain it using a strainer .That will be the 1st batch of coconut milk/onnam paal .Repeat with fresh batch of water again,that will be the second batch of coconut milk/randaam paal.
  4. Use red chilli powder and pepper powder as per your desired level of spiciness desired.
